The weatherman was right!! All the snow predictions came true! Friday we woke up to another five inches on top of what we received on Wednesday. Normally I am not a fan of cold weather, but I love when it comes a big snow like this past weekend. With the majority of places being closed both Friday and Saturday due to snow and bad road conditions, we made the best of our snowy weekend out playing in it! Friday we had our friends over and went to the park near our house to sled and snowboard. After playing in the snow for more than a couple hours we came back in to warm up with wine and games. Snow Angels with Emily and Morgan Walking across the park in thick snow isn't easy Group photo before moving on to another hill Sledding is much more fun when there's two to a sled When it looks like your snow boarding but your actually in the process of wiping out Saturday we called my dad to come get us since we knew his jeep would have no issues in the snow. We went out and enjoyed some lunch and went to our favorite bakery down town. If you're a fan of almond flavored cakes, you must try an Almond Cosmopolitan from Blackbird Bakery. They normally sell out quickly but we got lucky on Saturday, there were two left when we arrived! We spent the evening making snow cream, letting Auggie play in the snow while Bryan shoveled our driveway, and watching movies by the fire. Almond Cosmopolitan and fresh Snow Cream in the making Blowing up our air mattress in the middle of our living room made for a great movie night By Sunday the roads were pretty much clear and everyone was starting to venture out. The mountains were still covered in snow and looked beautiful. We wanted to take advantage of the snowy views before they disappeared with the warmer temperatures coming up in the next few days. We found a small hiking trail near Elizabethton and enjoyed the snowy views from the top of the trail. View from the top On our way up the trail We made it!

1.) Day trip to Knoxville. Since all of our friends have been home over the holidays we have been taking advantage of that during our weekends. We traveled to Knoxville a couple weekends ago to attend an Ice Bear Hockey game and made a pit stop on Market Square to eat at on of our favorite restaurants, Stock and Barrel. If you're ever in Knoxville and looking for a place with amazing burgers, this is your place. We also stopped into our favorite bar, The Peter Kern Library, inside the Oliver Hotel. This bar is a little hidden gem, it's very small with no windows and tucked inside the hotel- it's a speakeasy bar! The drinks are all delicious and you order out of an old book. I love concept of this bar- very cozy, quaint, and cool! 2.) Cheddar's Spinach Dip. Recently I have become slightly obsessed with spinach dip. Over the holidays I was constantly consuming spinach dip at all the Christmas parties we went to. You can never have a good holiday party without some great spinach dip. All the dips I've tried have been amazing, but nothing beats the famous spinach dip at Cheddar's Cafe. Instead of constantly trying to drag my family to Cheddars, I looked up a copy cat recipe online! This weekend we are supposed to have a big snow storm, so Bryan and I are going to the grocery store tonight to stock up! One thing I'll be making this weekend is the copy cat recipe. I'll be posting the recipe next week if it turns out just as good! 3.) Snow Days. So yesterday I blogged about how snow days are basically non existent for me now, however, work ended up closing a whopping two hours early! So I was still thrilled with excitement since this was the first big snow of the year. After having to catch a ride home from my coworker, I couldn't wait to take Auggie outside to play in the snow. He LOVES the snow. He hops in the snow like he is a little bunny and enjoys eating the snow! He does not enjoy using the bathroom in the snow. Since he's fairly small, the snow came up to his belly yesterday when he would walk in the yard so we had to clear a patch in the snow for him to be able to use the bathroom. As soon as we would bring him inside to dry off, he was already sitting/waiting to go back outside. If we get the big snow like the weather man says this weekend, I plan to take him to the park near our house where we went sledding last year so we can all play and enjoy the snow together!
Snow Days used to be the most exciting news I could get as a child. Even throughout my college career the mere idea of a snow day still filled students (myself included) with excitement. I remember if the slightest snow flurry fell from the sky I was hoping, praying, pleading in my head to the college dean for a chance to have a 'snow day'. There were times when it barely snowed at all and the frustration of not getting out of class for the few drops of snow on the ground made me beyond frustrated. It always seemed that we would get the biggest snow fall on the weekend instead of a week day.
I've realized after all the excitement and joy I experienced as a kid hearing it was going to be a snow day...it never, ever, EVER goes away. Unfortunately now that I have a "big girl job" snow days rarely ever happen.. even when there's no sign a road still exists under the thick snow, the chances of actually getting off due to the weather is slim to none. I'm trying to learn to embrace the non existent snow day.. the one like today where the majority of people in our area are off work, out of school, playing in the snow, and drinking hot cocoa. Truth is, I would LOVE to join them- including my hubby, who is at home playing with our dog who for the first time in his puppy life is experiencing snow. Although I've received the most adorable videos of Auggie stepping out onto the snow for the very first time, I want to be at home too! Call me selfish, but who wouldn't want to play 'kid' for a day and enjoy this beautiful snow day here in East Tennessee? |
