Happy Halloween! This day growing up was always one of my favorites, dressing up and trick-or-treating was always big for my little sister and I. My mom would drive us around to the busiest neighborhoods and let us go around to all the houses for hours. Now that I am older I still get just as excited. I love passing out candy to all the kiddos and seeing everyone's costumes. Our neighborhood now is one of those busy ones, we get slammed with trick-or-treaters so we know what to prepare for. I'm a little bummed Halloween falls on a Monday this year and we all have to wake up early and work tomorrow. I still don't think this weeknight will stop the night-owl trick-or-treaters in our neighborhood. I have a crockpot meal ready for us when we get home, Bryan plans on watching some football, and my cousin and her kids are coming by while we pass out candy in between. I am ready for tonight, but until then we have a little Halloween Party going on this afternoon at my work. We were encouraged to dress up and bring snacks so I made some easy and delicious Pumpkin Spice Muffins (or Cupcakes if you want to add some icing to the tops). It has been foreverrrrr since I have posted on the blog and a few months have gone by since I've posted a recipe on here. Life has been crazy busy lately and we have been out of town almost every week since August. This past weekend The Master's Golf tournament was playing on TV, which in other words means we had zero plans going on besides watching this all day/weekend long. This is one weekend every year Bryan must watch every second of this tournament while it is on. Since watching golf all afternoon on Saturday is not appealing to me, I figured I would cook an appetizer and a desert to take up some time. I knew Bryan would enjoy this as well. There were two new recipes I wanted to try, one of which was these amazing ham and swiss sliders. I have always loved ham and cheese sliders, but this particular recipe was a bit different from the rest. They are a little sweeter than the norm but the result of these babies were amazing. I think I scarfed down four of these when they were warm out of the oven, yes four. These sliders are sweet, cheesy, and a bit salty- which makes for the perfect combination of deliciousness if you ask me. Ingredients:

Layer the bottom of the rolls with ham, then cheese (I didn't leave out the center, I added cheese to the middle after I had taken the pic) Top each roll when done layering Combine the sauce until melted and evenly distribute over each roll Sprinkle with poppy seeds and place in oven Slice each roll and serve when warm out of the oven. These little bundles of joy are ahhhh-mazing. Until recently I didn't think I would ever eat asparagus- when I tried asparagus at a dinner party a few months back I was pleasantly surprised at how good it actually was. If you know me, you would be so proud that I actually like it (I am super picky). I can eat asparagus plain but this recipe adds more delicious flavor with cheese, prosciutto, and asparagus wrapped inside of a pastry. Who doesn't love a good bacon, egg, and cheese breakfast sandwich? I love having a delicious breakfast in the morning but hate having to clean up a kitchen mess to start my day off. I found a super easy way to make eggs for sandwiches in the morning without the mess and they turned out perfect. I made these simplistic breakfast sandwiches for Bryan and my dad on Sunday morning and they were a hit! What you need:

Bryan started making these roasted potatoes a few months ago when we would have grilled chicken for dinner and we both became obsessed with this delicious side item. Ingredients:

Preheat oven to 400 degrees. Wash your potatoes and slice into quarters. Place clean, cut potatoes in a large mixing bowl. Pour olive oil over the potatoes and mix garlic, oregano, salt, and pepper in a separate bowl. After ingredients are mixed, pour on top of the potatoes and toss well to coat all the potatoes. Place potatoes on a lined baking sheet and roast potatoes for 15 minutes. Add the chicken stock to the potatoes, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 15 minutes more or until the potatoes are golden and cooked through. Total cooking time, approximately 40 minutes. My addiction for spinach dip is still going strong. A couple weeks ago I said I would post the latest spinach dip recipe I had made but never got around to it. After failing my first attempt at the dip, the second attempt turned out much better. Warning: if you are using frozen chopped spinach you must make sure to thaw it out completely and that there is no extra water in the spinach whatsoever (This is how I ruined my first attempt at the dip.) Pat the spinach down with paper towels if you have to..just to assure your dip will not be watery/runny. This dip is amazing and reminds me of Cheddar's spinach dip..if you have ever had theirs, you know you will like this one! Ingredients:
Directions: Preheat the oven to 350 degrees. In a medium bowl, combine and mix all ingredients together. Stir until well blended. Drizzle a little bit of olive oil into an 8x8 baking dish. Spread spinach mixture into your baking dish. Bake for approximately 25 minutes or until warm and bubbly on the top. Serve immediately. All ingredients shown above Cheesy Spinach Dip ready to eat!
Apple Crisp has always been one of my favorite deserts, especially during the cold winter months. My Mimi use to bake the best Apple Crisp year round, whether it be winter or summer I could always count on her delicious Apple Crisp for an afternoon snack. Since I haven't had a bite of that yummyness since she passed, I asked my mother-in-law on Christmas Eve if we could bake some. It turned out wonderful and tasted just as good as I remember! Ingredients:
Directions: Heat oven to 375. Place sliced apples in greased square pan or baking dish (10"x6"x2"). Blend remaining ingredients until mixture is crumbly. Spread mixture over apples. Bake 30 to 35 minutes or until apples are tender and topping is golden brown. Serve warm with vanilla ice cream for extra yummy results. This recipe makes approximately 6 servings. Peel and slice the apples (longest part of the recipe) Placed sliced apples in a 10x6x2 baking dish Place remaining ingredients in mixing bowl Blend remaining ingredients until crumbly Spread crumbly mixture over the apples Bake 30-35 minutes and remove from oven Serve warm with a scoop of ice cream
