On Christmas Eve my mother-in-law and I were trying to come up with a yummy Christmas cocktail recipe to make before our Christmas dinner. After looking on the internet for awhile I found the Grinch Spritzer. It looked Christmas-y and sounded great so we decided this was the drink for the evening. We used honey to rim the top of our glasses to make the green sugar stick. We used Lime Sherbert, Skyy Vodka, and Sprite for our mixture (this recipe is by the glass, do not blend). The end results were perfect, it is a must-try drink recipe for the holidays!

This Chili Mac&Cheese is a combined recipe! Some of it is made on the stove while the rest cooks for just a short couple hours in the crock pot. As most of you know I love using my crock pot but especially so during this time of the year. This is another comfort food recipe and when is a better time to have the smell of chili going throughout your house then on a cold rainy night in December? Ingredients:
Directions: Brown beef with the onion and garlic until no longer pink. Drain grease and liquids then transfer to your crock pot. Add in tomatoes, tomato sauce, chili powder and black pepper and stir evenly in the crock pot. Cover and cook on low for 3 hours. Cook macaroni on stove top until al dente, drain and stir into beef mix. Add in cheddar cheese. Cover and cook on low for an additional 1 hour. (Total time in crock pot 4 hours). Hope yall enjoy!!
Do you ever enjoy eating breakfast for dinner? We do! This is a super easy go-to when we are wanting something breakfast-y. It's a warm crescent casserole that's perfect for a cold night (or cold morning). We've made this recipe multiple times, both for breakfast and dinner and have always enjoyed it. It's pretty filling, especially if you have some eggs and other sides to go along with it so it's perfect for a breakfast dinner! I've also heard of people making this dish as a party platter and cutting it into bite size pieces. Anyone that has ever tried ours has loved it. With just 4 ingredients it couldn't be more simple! Ingredients:
Directions: In a saute pan brown sausage, then drain. Add in some salt and pepper, then blend the block of cream cheese in with the sausage until melted. Unroll one can of crescent rolls into the bottom of a 9 x 13 baking dish, pressing the seams of the crescent rolls together. Spread the sausage mixture over the crescent dough, then add your mild cheddar jack cheese on top of the mixture. (Note: you can also use mild cheddar cheese instead of the cheddar jack, we've used both before and they both taste great- it's your personal preference.) Unroll the remaining package of crescent rolls and place on top of the sausage mixture. Pressing the seams together. Bake at 350 degrees for approximately 20-25 minutes or until the crescent dough is golden brown. Hope yall enjoy!
ps- shout out to Bryan for cooking the majority of this while I snap pictures, love ya meant it! This recipe is one of our family favorites. It's somewhat time consuming so I don't make it that often, but when I do I remember just how delicious it tasted the last time I made it! This past weekend I cooked this recipe for us and when Bryan took his first bite he said "this is definitely my favorite meal you make", so it's worth a try!! You can also cook this many different ways by adding broccoli or peas to the mix but I keep it plain and simple and it tastes just as good! You can also serve this recipe over rice or by itself when finished! Ingredients:
Directions: Boil your chicken breasts - Once water begins to boil and you place your chicken breasts in, add the garlic salt and olive oil, cook chicken for approximately 20 minutes if unfrozen (or until cooked all the way through). When chicken is cooked, let cool then pull chicken into pieces or cut in cubes (however you prefer) into a 9 x 13 baking dish. In a separate bowl, mix together the cream of chicken, sour cream, and minced garlic. Pour the mixture over the chicken. Crush the crackers by hand in a plastic bag. In a separate bowl add the crushed crackers, poppy seeds, and melted butter. Stir together well and pour on top of the casserole until the entire thing is covered. Bake in the oven uncovered for 30 minutes at 350 degrees. Hope yall enjoy!
Next week I am attending an event where we will try to encourage children to eat and enjoy more fruit. I thought what better way to get a child to love fruit than to try a creamy fruit smoothie? Fruit smoothies are delicious for all ages and are full of vitamins & minerals! These particular smoothies each have their own benefits. I also used 1/2 tsp of ground flax seeds in each recipe since it's a great source of fiber! I wasn't sure which flavor of smoothie I should go with so I decided to make three different flavors and have the people I work with help decide on the one that was best tasting! All three recipes were amazing, but the majority chose .... Strawberry Banana. Strawberry Banana Smoothie:
For each smoothies, blend all ingredients together then serve immediately. Each recipe makes approximately 4-5 cups. Pineapple Mango Smoothie:

I should start by saying that I am very picky about what I eat so this may seem bland without veggies but I promise it's not. You can most definitely add in some carrots, onions, and celery if that's the way you like it but I prefer simple and creamy. I totally forgot how good this recipe was until last night! It's thick and creamy and nothing like what you get out of a can or fix on the stove. It makes so much that we can eat on it for a couple of days and still have plenty to freeze for another time. Ingredients: 1 bag of Wide Egg Noodles (we have used No Yolk and Creamette, both are great) 2 10.5 oz. cans (or 1 large can) of Campbell's Cream of Chicken 8 Chicken Boullion Cubes 2 12.5 oz. cans of Chicken (Swanson's) 7 cups of water 1 packet of Hidden Valley Ranch Mix (my secret ingredient!) Directions: Put everything but the noodles and ranch packet in the crock pot. Cook on high for 4 hours. Prepare the noodles in a pot on the stove. Once the noodles are ready, add them to the mixture in the crock pot with the ranch packet and stir. Let everything cook for 20 minutes. The noodles will soak up most of the soup so don't expect it to be really watery. If you prefer more soup, try adding some chicken broth at the beginning. Snuggle up on the couch and enjoy! And a bonus pic of my little guy, Beckett, stuffing his face with the yummy noodles! :-) This one pot recipe is AMAZING! It is incredibly flavorful and super easy to make, everything goes into just one pot! Even the noodles are cooked to perfection. Garlic and Parmesan make for the perfect combo in this super easy dish. This is a perfect meal when your in a hurry, don't want to clean a lot, and craving something full of flavor. Ingredients:
Directions: Heat olive oil in a large skillet over medium high heat. Add garlic, stirring frequently, about 1-2 minutes. Stir in milk, chicken broth, butter and noodles- season with salt and pepper, to taste. Bring to a boil- reduce heat and simmer, stirring occasionally until pasta is cooked through (About 18 to 20 minutes) Stir in Parmesan. If the mixture is too thick, add more milk as needed until desired consistency is reached. Top with Parsley and serve immediately. I hope yall enjoy!!
So the last couple of days have been super chilly in the morning and evenings. It's actually starting to feel like Fall here in East Tennessee- so I was craving something warm and yummy for dinner. My Mimi used to make the BEST ever chicken and dumplings, me and my friends would go over there almost once a week after school to eat us some of her famous chicken and dumplings. Since she past away a little over a year ago, I have been looking for a SIMPLE yet tasty C&D recipe. I finally found one on Pinterest a few months back and ended up loving it! It cooks in a crockpot all day and is too simple to make. I will say, it's not my Mimi's recipe that's for sure, but it is still so yummy! What I would give to have a bowl of hers hot off the stove right now with those yummy thin dumplings. This recipe might be made in a crockpot with round lumpy dumplings, but I promise it is still soooo good!! Ingredients:

Place thawed chicken in crockpot. Pour 1 cup of water over the chicken breast. Sprinkle 1/2 teaspoon of onion powder over the chicken. Top chicken with 2 tablespoons of butter. Pour 2 cans of cream of chicken over the chicken breast. Pour 14 oz of chicken broth over the cream of chicken. Cook on low for 8 hours. After the chicken has cooked for the proper amount of time, tear the chicken a part while still in the crockpot,then give the entire thing a big stir. I always use a pot fork to do this since it needs to be kept in the crockpot during this process. Once the chicken has been torn a part into thinner pieces and stirred, it is now time for the biscuits. Tear each biscuit into 7-8 pieces and place in crockpot. Let cook for another 30 minutes to 1 hour or until the biscuits are done. (My crockpot only takes about 40 minutes for the biscuits to be cooked but some may take less/longer.) Once the biscuits are finished give the entire thing another big stir and then serve! I hope yall enjoy!! This is a comfort food recipe, filled with all things carbs..lots of carbs, but oh so good. Since there is only two of us, we have plenty of left overs and this is a dish that's still great reheated the next day. This dish could easily feed a family of four or five. Ingredients:
Directions: Boil the chicken breast until finished, remove and shred into a 9 x 13 casserole dish Sprinkle the shredded chicken with 2 tsp of garlic powder and 1 tbsp of olive oil Place cooked elbow macaroni on top of the shredded chicken, garlic, and olive oil On top of the macaroni noodles, empty the 2 cans of cream of chicken soup, milk, chicken broth, shredded cheese, and pepper. Stir all ingredients together (including the chicken and noodles) until mixed evenly throughout. I always save a little bit of cheese to top off the casserole before placing it into the oven. Tip: if you want to add some crunch, add panko breadcrumbs to the top before placing the casserole in the oven. Place the casserole into the oven at 350 degrees for approximately 20 minutes. Serve when complete. I hope yall enjoy!! This BBQ chicken is one of the easiest recipes you'll make! When I first realized it was time to learn how to start cooking I started with recipes you really couldn't go wrong with. Bryan's aunt Deangela is an AMAZING cook, when I tried this BBQ she had made, I fell in love! It was absolutely delicious and she told me I could easily make this on my own at home. Before I begin let me just say I LOVE crockpot recipes, you can make some of the easiest and best tasting recipes in them, so if you have any good crockpot recipes, send them my way! There will be a lot more crockpot recipes to come... Ingredients:
Directions: Cut the excess fat off the chicken breasts, rinse and clean, place in crockpot Pour 1 1/2 cup of water over the chicken breasts Sprinkle 1 tbs of lemon pepper seasoning over the chicken breasts Top with 10-12 dashes of liquid smoke (I use Colgin Orginial Liquid Smoke) Cover and Place on Low Heat for approximately 8 hours. When ready, remove chicken breasts from crockpot and place in baking dish. Shred the chicken finely (it should fall right apart) in the baking dish. Mix the shredded chicken with a bottle of your favorite BBQ sauce (mine's Sweet Baby Rays). Then place in the oven on 350 for 10-15 minutes to let the BBQ sauce really soak in and to get the chicken just a little crisp on the top! Once complete from the oven, serve on your favorite buns! It is ready to go! It's that easy!! Oh and super delicious! I hope yall enjoy!!
